We have an absence problem at work and they are trying to use excel to count the instances of absence from a list of dates.

1 day off is an instance but if you have 20 days off its still just one instance, the dates of absence are in Column E and the Data goes upto Column I.

Preferably a formula to get it to work and obviously not counting weekends, have tried Google and it seems to be a common problem but the solutions I have seen are from years back and mean adding in new columns to input data on a weekly basis and then count that data??

That's fine for creating a spreadsheet from scratch but this is an output from our present time keeping database per individual, which doesn't count instances for some reason??
