Booking up holiday to Florida

not been since 2005 when I had no kids so it was relatively cheap etc

 

Now I have two kids and want to take them to Florida next Summer (July Aug 2017).. 

 

Struggling to find anywhere that allows me to book flights over a year in advance. Also there is all the park tickets etc..

 

I know there are right and wrong (cheap and expensive) ways of going about booking and sorting out flights and hotels and park tickets etc ... Anyone share any advice on the best place to book through?
