A taxing question

Let's just pretend that I undertake some work outside of my normal PAYE employment arrangement. I receive around £10k gross which is paid into my bank account. All legit. More work ongoing with a further 10 - 15k likely to be paid over.

 

What is the procedure for Mr Taxman to get his slice? I've tried phoning HMRC loads of times but as yet have failed to get through. I do not normally complete a tax return; usually all deductions made at source.
