I've just made the best curry i've ever tasted. Mutton, roast tomatoes and curry leaves. It was f***ing sensational.

 

I have had a standard method of curry makingby blitzing my onions to a paste and sweating them off to make a base for the sauce but i've always tended to use tinned tomatoes. I've now learned this is a mistake. I used Ostrich Man's missus idea of tray roasting a load of tomatoes until the skins fall off and can't recommend it enough. You taste proper tomato flavour and not just acidic and overpowering metallic taste.

 

Next, I went to Hulme and was quite surprised that in ASDA their butcher was halal and had goat and mutton. I've never tried either but have heard that the flavour of mutton is much better than lamb, and oh yes! it is!

Finally for magic bullet number 3, I got a bunch of curry leaves in Hulme ASDA and blitzed a load with the chillis garlic and ginger. When the onions are sweated you add that with the spices and the Mutton and slow cook it all with the tomatoes.

I don't like to boast but its better than any curry i've had in a restaurant. Had it with chapatis and raita. Can't be beat.
