He's a good player and has the potential to be great but he's still very young and very raw with plenty of work needed to his game.

Different. This should be clearer for you. He wouldn't start against Everton for me even if he's match fit (which he probably won't be). Gerrard, Alonso and now Pennant are doing just fine.

Momo is a good player but the midfield without him has beaten Chelsea, Spurs and Bolton and others so I could never understand this concept of Momo being the first name on the list.

He is a great player and will be used (and rightly so) depending on opponents and tactics. 1st name on the list? I see no justification.

You're right... Everton Game is suited for Momo though so if he's fit I would love him to play!
